Charlotte Kruse Madsen
Founder Charlotte Kruse Madsen is from Denmark. Educated at the École Hotelière de Lausanne in Switzerland and trained at Ida Davidsen’s in Copenhagen, she’s worked at five-star hotels across Europe. She founded the contract catering company Madsen Food in 2006, with the aim of bringing the Scandinavian food experience to London. The Madsen Restaurant sees a long-held dream of Charlotte’s come to fruition: a modern Scandinavian eatery in the heart of London.
Esben Muhlig Sørensen
Esben is our Head Chef and started working at Madsen in May 2010. He left Jutland in Denmark to come to London specially to run the Madsen Restaurant kitchen. Young, dynamic and full of ideas, Esben trained at Silkeborg chef academy and since worked at Hotel Strandkroen in Søndervig, Jutland. He also has experience from the French Alps, as he worked as a chef for a ski season in Valloire. He shares a passionate commitment to new Nordic cooking using fresh, locally sourced produce.
Karolina Vithen
Karolina is the Restaurant Manager and runs the restaurant on a daily basis. Karolina is both Swedish and Danish however, she grew up in Malmö in the South of Sweden. Karolina is used to living abroad as she trained at The Hague Hotelschool in Holland and undertook internships at Four Seasons in Dublin and Swissotel in London. Karolina has a real interest for the industry as her parents used to run boutique hotels in Sweden. Karolina’s passions are wine and delivering great customer care.
