The Team


Charlotte Kruse Madsen
Founder Charlotte Kruse Madsen is from Denmark. Educated at the École Hotelière de Lausanne in Switzerland and trained at Ida Davidsen’s in Copenhagen, she’s worked at five-star hotels across Europe. She founded the contract catering company Madsen Food in 2006, with the aim of bringing the Scandinavian food experience to London. The Madsen Restaurant sees a long-held dream of Charlotte’s come to fruition: a modern Scandinavian eatery in the heart of London.

René Madsen
René is Head Chef. He left Jutland in Denmark to come to London specially to run the Madsen Restaurant kitchen. Young, dynamic and full of ideas, he previously worked at the Restaurant Stauning Havn in Stauning and as head chef at Hotel Limfjorden in Thisted. Having the same surname (though they’re not related) isn’t the only thing René has in common with Charlotte. He shares a passionate commitment to new Nordic cooking using fresh, locally sourced produce.

Kitchen
The kitchen team is made up of mainly Scandinavian staff, such as Danish Mike Salcedo, who brings his experience of Restaurant Tyrstrup Kro in Christianfeld, Denmark.

Heidi Bie Jensen
Assistant Manager Heidi is from Gilleleje in Denmark. Madsen benefits from her expertise gained from working in the restaurant industry in both Denmark and abroad.
